I have been practicing speedrunning a lot recently, and the rapier is always the weapon of choice. This makes sense for a lot of reasons; It has one of the fastest attack speeds in the game. Its damage per stamina consumption is amazing. 2h r1 spam does an incredible amount of poise damage, enough to stagger nearly any non boss in the game.

DEX builds are perfectly viable. There's lots of super fun weapons to use, and if you ever need something that hits harder than the average DEX weapon, the Murakumo is always there. That thing is one of my favorite weapons in the game, but it almost feels like a betrayal to DEX because it's a big weapon.

Swordsman starts with a +1 shortsword, which is a pretty good DEX weapon. Low durability tho. But it'll jump-start you to something better. Winged Spear is pretty good for DEX, although you get it early, it's basically a slower, longer range rapier. Can't stunlock people like the rapier tho.
